Pasta is a great energy source and orzo is a wonderful finger food for babies. Orzo is tiny pieces of pasta that looks like rice. This recipe is very versatile, as you can switch out the veggies and use peas, zucchini, corn, or whatever you have on hand.
Ingredients:
1/2 cup orzo
1 small carrot, peeled and diced
1 small zucchini (I did not have this on hand so I replaced it with about 1 cup of peas)
1/2 cup chopped broccoli florets
1 TB unsalted organic butter
1/4 cup grated Cheddar cheese
Directions:
1) Fill a pot with a lot of water and bring to a boil.
2) Once the water is boiling, add the pasta and the carrots and cook for 5 minutes.
3) Add the zucchini (or peas, in my case) and broccoli and continue to cook for 7 minutes.
4) Drain the pasta mixture and add the butter and cheese. Gently stir till the cheese and butter melt.
I doubled the recipe because the first time I made it, my 10-month old gobbled it up! I love it too, however, I add a bit of salt to my servings.
This dish is prefect for freezing. I keep a bit in the fridge and freeze the rest, then when I need it, I just pop it in the microwave. Hope you and your family enjoy this recipe!
